Compass Box's delicious Spice Tree was briefly illegitimate, according to SWA regulations. After adjusting its creation, Spice Tree is back, and better than ever. It's a blended malt made from Highland malt whiskies, aged in specially made casks with new French oak heads.

A peaty offering and a vatted malt created by the renowned John Glaser, of Compass Box. The Peat Monster contains whisky from secret distilleries (all very cloak and dagger). They can tell us that some was from the village of Port Askaig in Islay, with some south coast Islay whisky too, vatted with Ardmore.

De distilleerderij staat in Blackford, Perthshire. Werd in 1994 gesloten, maar in 2003 door vier inversteerders aangekocht en weer in werking gezet. Er wordt nu uitsluitend voor malt whisky geproduceerd.

Released in 2013, this fabulous bottling from Tullibardine sees the rich, malty whisky finished for 12 months in top-quality 500-litre sherry butts. The result is something to behold.

Premium Pedro Ximinez (PX) is a sweet wine with a darl mahogany colour and a flavour of sun dried grapes. ideal for chocolat desserts

aged for many years in oak barrels, with a deep amber colour. it has a nutty and smooth flavour

This award-winning Fino Sherry is pale in colour with just a hint of straw yellow at the rim. Powerful and acute on the nose, yet aromatic, intriguing and inviting. Sensuously textured rather than brittle, absolutely bone dry, aristocratic and very poised.

SOLERA RESERVA Light mahogany colour. Well balanced and full bodied.

Glenfiddich IPA (Indian Pale Ale) Experiment is behoorlijk vooruitstreven te noemen. Dit moet de eerste keer zijn dat men een ex biervat gebruikt om whisky een afwerking in te geven.

Royal Lochnagar is een van de kleinste distilleerderijen in de Classic Malts en is maarliefst drie keer herbouwd. Toch heeft het, met zijn twee kilnschoorstenen in de vorm van een pagode, nog altijd dezelfde traditionele uitstraling en dezelfde technieken (waaronder een open mashkuip).

The Spring Stallion. Zoals onze fabel gaat, waren de landen van de Royal Deeside bedekt met een dikke en ijzingwekkende mist totdat een trotse hengst, wit als sneeuw, door de ijzige sluier scheurde.

De betekenis van de double cask matured houdt in dat een deel van de whisky rijpt op traditionele vaten, het andere deel op ex-sherry butts. De traditionele vaten, ook wel ‘refill casks’ genoemd, dragen bij aan de ontwikkeling van de subtiele aroma’s in de whisky.
